Emulsion 12 : A substantially permanent heterogeneous liquid mixture of two or more liquids which do not dissolve in each other but which are held is suspension or dispersion, one in the other, by mechanical agitation or, more frequently, by adding small amounts of substances known as emulsifiers. Emulsions may be mechanical, chemical, or a combination of the two. They may be oil-in-water types or water-in-oil types. (Bul 10C, Bul D11)
